Refrigeration

Common practice in Ifugao is for the meat markets to sell the food (pork, poultry, seafood) without refrigeration. It is believed that since the food is fresh, (the fish tend to still be alive, and only the number of pigs needed for the day is slaughtered). This practice would never fly in the U.S. but does this mean that it is not fine? Is the meat still fine without being refrigerated? Do the people know about bacteria, and that even though one can not see it, that it is still present?

Twirlers are spun above the food the keep the flies off. The flies are attracted because the food is not refrigerated. Is it a difference between bacteria that can be seen and cannot be seen?

  1. Bacteria? and microbes, of course the people know about bacteria and microbes. That's why they make their own wine through fermentation. This is where ifugaos prove and acknowledge that every living thing on earth has it's own place and purpose in the sun.
In the olden days we had our own way of doing things and symbiosis is very evident in our daily lives. Basic example is fertilizing our garden by using compost materials ( animal waste and plant leaves) and we had good harvest. We have our water system where in we can just drink from a (Tud-dhe)That's water coming from the mountain and u just put a conduit usually the bamboo stem and u can drink from there. We have our forest system that I beleive the governor is trying to reintroduce etc.. we had our own way of doing things and it had worked. That's why u don't see MRSAs & Cdeficills in our place. How does an ordinary bacteria mutate it self and become a superbug, defying the best antibiotics ever tested in the best laboratories of this chaotic world, and causing a lot of deaths? How could the poor immune system not able to produce enzymes, blood cells that would contain this, would have been simple infections. It started from an in-grown toe nail and ending up being amputated. What have we done? Do we deserve this? What should we do?
